Chain of fruit, vegetables and vegetables in Brazil: A bibliographic review on transactions and governance structures

The Brazilian fruit and vegetable chain has been showing an increase in demand and consumption, following a global trend and causing greater quality requirements on the part of its final customer, in addition, the chain has undergone a reconfiguration with the weakening of Distribution Centers (CEASAs) and emergence of large supermarket chains in the distribution and wholesale segment. Furthermore, the chain has coordination failures. In this sense, the present work aims to know how the transactions and governance structures adopted between producers and other links in the fruit and vegetable chain in Brazil happen. A qualitative, descriptive and bibliographic research was undertaken, based on studies on the subject published in Google Schoolar, SciELO and Capes Periodicals Portal, which resulted in 20 selected works. The analysis method was content analysis, using Atlas.ti® software. As a result, it was possible to characterize the fruit and vegetable chain in Brazil, the transactions and governance structures adopted, as well as problems and coordination failures were found, such as: high losses and waste; small and disorganized producers, with low technification; the possibility of market power of large retail chains; difficulty in accessing channels for small producers to sell their productions.Such issues are added to the high temporal specificity due to the high perishability of the product, which make efficiency requirements along the chain necessary to favor the delivery of an adequate product to the final consumer.
