Abstract

This study aimed to find technical and economic viability for the formation of the processing chain of whey, retrieving its value as a raw material for special products. Based on information from 92 dairies located in 52 cities of Minas Gerais State, it was suggested the location of processing units of whey – and identification of its suppliers – that minimizes the costs involved in the acquisition and processing, as well as the values that makes the enterprise viable. Logistics and financial indicators were combined in the analysis of the enterprise. The results indicate strong challenges to this agribusiness chain and government entities due to the fact that costs of whey logistics and processing are high in Brazil when compared to imported whey.
